Dynamic Subtitles or Textoverlay and/or embedded, not shown, text

Is it possible for one doing on-the-fly recording of gstreamer video to add subtitles or a text overlay with dynamic text?  Picture something like a court stenographer "typing" the court transcript over a video log.

Is it also possible to pass along the same data without it being shown but still added to the recorded stream?  Perhaps as an invisible watermark or copyright statement?
